(1) Elderflower Syrup Ingredients
1/2 cup water
1/2 cup sugar
1/2 cup elderflower liqueur (such as St. Elder or St. Germaine)
Mix together the water and sugar in a large microwaveable bowl.
Heat in the microwave at four times for 30 seconds each time.
Stir each 30 second increment
After two minutes, the sugar should be melted and mixture should be clear.
Let the mixture cool.
Stir in the liqueur (or elderflower syrup)
“Ice” the cake with the syrup
(2) The Cheesecake Ingredients
The Filling:
1 lb. spreadable cream cheese
3 medium eggs
½ cup sour cream
? cup sugar
2 Tablespoons lemon juice
The Crust:
1½ cups graham cracker crumbs
? cup butter
¼ cup brown sugar
Crust:
Preheat your oven to 350°F
Mix the crust ingredients and push into the bottom of a 9-inch springform cheesecake pan.
Bake in preheated oven for 5 minutes.
Do not shut the over off when finished with this step.
Filling:
Blend the filling ingredients together.
Pour over the crust in the springform pan.
Bake in oven for 35 minutes, until the filling is firm to the touch.
You now “ice the cake” with the elderflower syrup
Bake for 5 more minutes
Turn the oven off.
Cool
Refrigerate
