Kat Bein for PHILADEPHIA STYLE has three recipes for CHEF FRANKLIN BECKER’S WILD MUSHROOM MATZAH BRIE WITH CARAMELIZED ONION JAM AND CREME FRAICHE; CHEF JASON GOLDSTEIN’S HOMEMADE EVERYTHING BAGEL MATZO; and CHEF JASON GOLDSTEIN’S BAGEL AND LOX QUICHE WITH MATZO CRUST.

An entree I never heard of was posted by ALEXIS STEINMAN. It is for a Passover dish from Tunisia, Yabrak, Stuffed Romaine Leaves with Herby Meatballs from Monique and Josef, the Moroccan-born couple that own Patisserie Avyel. They serve it with a turmeric-coated lamb shoulder above a bed of onions. Alexis’ friemd Judith, whose family hails from Algeria’s Tlemcen region, will blend almonds and raisins into mlosia, a thick jam for Passover in Marseilles. I really like the layout of the story and recommend it.
