The traditional manufacturing methods are the secret to the charm of tehinas from Nablus. Yehuda Litani, an Orientalist, journalist and author of the book, “Not By Hummus Alone,” agrees.
“They use 100 percent sesame seeds,” says Litani, “and their grinding methods are ancient, stone-grinding that produces a totally different flavor from the sesame.”
